 How to make mute?



Ingredients:

-1 paw of beef, peeled and split, well cleaned
-2 pounds of rib of beef, well cleaned
-1 pound of gut well cleaned
-1 pound of omasum, well cleaned
-1 pound of rennet (Tripe, part of the viscera of the beef), well cleaned
-1 pound of pork, well cleaned
-1½ pounds of white peeled corn, cooked (from the previous day)
-1 pound of potatoes, peeled and diced
-1 pound of ahuyama, peeled and minced
-1 eggplant in cubes
-1 carrot in cubes
-½ pound of chickpeas, soaked (from the day before)
-¼ pound of pasta in shells
-10 cimarron leaves
-3 long onion stems
-2 big onions
-5 cloves of garlic
-3 arracachas (yellow)
-2 chicken broths
-Salt
-Finely chopped coriander

Preparation:

1. In a large enough pot,we add the rib of beef, pork and water until cover them, put it to medium heat and let it boil.
2. Then we have the cimarrón leaves, the onions, the ahuyama, the arracacha, the carrot, the eggplant, the corn and the chickpeas,we let it cook over medium heat.
3. In an express pot, we cook the tripe (gut, omasum and rennet) over medium heat for 30 minutes, then cut it into cubes and add it to the previous preparation.
4. In an express pot, we cook the beef paw over medium heat for 45 minutes, then cut into squares and together with the broth after that we put everything in the large pot.
5. We also add the potato in squares, the garlic, the chicken broths, simmer for 30 minutes (with 10 minutes remaining for the final cooking, we add the pasta, it should be al dente). We rectify seasoning (if necessary add salt).
6. Serve hot and sprinkle with coriander.
